Soft and Fluffy Dinner Rolls
Ingredients
- 1 tablespoon Food Club Active Dry Yeast
- 1/4 cup Food Club Granulated Sugar
- 1/2 cup warm water
- 1 Simply Done 9x13 Foil Baking Pan with lid
- 4 1/2 cups Food Club All-Purpose Flour (plus more for shaping)
- 1 1/2 teaspoons Food Club Salt
- 1 cup Fresh Harvest Whole Milk
- 6 tablespoons melted Food Club Unsalted Butter, divided
- 2 large Fresh Harvest Eggs, lightly beaten
- 1 tablespoon chopped fresh parsley
- 2 teaspoons chopped fresh thyme
- 2 teaspoons Food Club Parmesan Cheese, grated
Directions
- In a small bowl or measuring cup, mix together yeast, sugar and water until combined. Let sit at room temperature for 5 minutes, or until frothy and bubbly.
- Add yeast mixture, flour, salt, milk, 3 tablespoons butter and eggs to a Simply Done Foil Baking Pan. Mix until combined. Dough will be very sticky. Cover and let rise in a warm place until tripled in volume, about 2 hours.
- Uncover and gently punch down dough to deflate. Transfer dough to a lightly floured surface and knead gently 3 or 4 times. Line foil pan with a long piece of parchment paper, letting it hang over the sides
- Dust top of dough with flour and form into a long log. Divide dough into 12 equal pieces. Roll each piece into a taut ball and place, smooth-side-up, in parchment-lined foil pan. Cover and let rise until almost doubled in size, about 30 minutes.
- While rolls are rising, preheat oven to 400°F. Place rolls in oven and turn down oven temperature to 375°F. Bake for 15-20 minutes, or until golden-brown on top.
- While rolls bake, mix together remaining 3 tablespoons butter with parsley, thyme and Parmesan cheese. Remove rolls from oven and brush with herb butter mixture. Let cool at least 5 minutes before serving.
