Roasted Sweet Potatoes and Apples

Ingredients

  • 2 medium sweet potatoes
  • 3 Granny Smith apples
  • 2 Tbs. Food Club Vegetable Oil, divided
  • 2 Tbs. Full Circle Market Maple Syrup
  • 1/2 tsp. Food Club Ground Cinnamon
  • 1/2 tsp. Food Club Salt and Food Club Ground Pepper

Directions

  1. Preheat oven to 400 degrees. 
  2. Peel sweet potatoes and cut into 1” pieces. Toss with 1 Tbs. oil, season with salt and pepper and arrange them in a single layer on a baking sheet. Roast in oven or 20 minutes.
  3. While potatoes are cooking, core apples and cut into 1/2” wedges and toss with remaining 1 Tbs. oil. After 20 mins, remove potatoes from the oven and add sliced apples, cinnamon and maple syrup. Gently stir to combine and return pan to oven. Cook for 15 minutes more, stirring half way through.
  4. Once potatoes and apples are slightly browned and softened, remove from oven and allow to cool briefly before serving.
