Ingredients
- 1 salmon filet
- 4 cups Food Club brown sugar
- 1/2 cup salt
- 1.5 tsp cayenne pepper
- 2 oranges, sliced into rounds
For the Glaze
- 1/2 cup soy sauce
- 1/3 cup orange juice
- 1/2 tsp powdered ginger
- 3 tbs honey
- 1 tbs minced garlic
Directions
- Mix brown sugar, salt and cayenne pepper
- Cover the salmon filet completely with the brown sugar mixture in a baking dish and refrigerate for 4.5 hours.
- After the four hours, rinse the fish and pat it dry.
- Set grill to 225 F
- Create a long foil "boat" by folding up the sides of the foil. Then place a thin layer of orange slices inside the boat and top them with the salmon filet.
- Smoke for 90 minutes (or until internal temperature is 145 F).
- For the last 30 minutes of smoking time, brush fish down with glaze every ten minutes.
- Combine all glaze ingredients and bring to a simmer.
