Keto Pepper Melts 

Ingredients:

  • 4 medium red, orange, and/or green bell peppers, sliced vertically in half through the stem, seeds removed
  • 1 (12-ounce) package Full Circle Market™ Applewood Smoked Uncured Bacon, chopped
  • 1 pound ground turkey 8 slices Full Circle Market™ Organic Sliced Provolone Cheese
  • Chopped fresh basil, salsa, and/or toasted pine nuts for garnish (optional)

Instructions: 

  1. Preheat oven to 425°. Place peppers, cut side down, on a rimmed baking pan; roast for 10 minutes or until slightly tender.
  2. Cook bacon in a large skillet over medium-high heat for 8 minutes or until crisp; transfer to paper towel-lined plate.
  3. Discard all but 2 tablespoons of drippings from the skillet;
  4. Add turkey and cook for 8 minutes or until browned.
  5. Stir in bacon.
  6. Turn peppers and stuff with turkey mixture and top with cheese.
  7. Roast peppers for 3 minutes or until cheese is melted.
  8. Garnish with basil, salsa, and/or nuts, if desired. Serves 4.
