Keto Pepper Melts
Ingredients:
- 4 medium red, orange, and/or green bell peppers, sliced vertically in half through the stem, seeds removed
- 1 (12-ounce) package Full Circle Market™ Applewood Smoked Uncured Bacon, chopped
- 1 pound ground turkey 8 slices Full Circle Market™ Organic Sliced Provolone Cheese
- Chopped fresh basil, salsa, and/or toasted pine nuts for garnish (optional)
Instructions:
- Preheat oven to 425°. Place peppers, cut side down, on a rimmed baking pan; roast for 10 minutes or until slightly tender.
- Cook bacon in a large skillet over medium-high heat for 8 minutes or until crisp; transfer to paper towel-lined plate.
- Discard all but 2 tablespoons of drippings from the skillet;
- Add turkey and cook for 8 minutes or until browned.
- Stir in bacon.
- Turn peppers and stuff with turkey mixture and top with cheese.
- Roast peppers for 3 minutes or until cheese is melted.
- Garnish with basil, salsa, and/or nuts, if desired. Serves 4.
