Grilled Shrimp Snap Pea Salad

Ingredients
For the Grilled Shrimp
- 1 pound Brookshire Brothers Shrimp, shelled and deveined
- 1 tablespoon Food Club Olive Oil
- 1/2 teaspoon Food Club Garlic Powder
- 1/2 teaspoon Food Club Salt
- 1/4 teaspoon Food Club Black Pepper
For the Snap Pea Salad
- 1 (15-ounce) bag Bushel & Basket Sugar Snap Peas, trimmed and halved
- 1 medium Granny Smith apple, cored and thinly sliced
- 1/2 English cucumber, thinly sliced
- 1/2 medium red onion, thinly sliced
- 1 bunch radishes, trimmed and thinly sliced
- 3 tablespoons lemon juice
- 1 garlic clove, minced
- 1 tablespoon chopped fresh mint leaves
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon Food Club Salt
- 1/4 teaspoon Food Club Black Pepper
- 1/2 cup Food Club Extra Virgin Olive Oil
Directions
For the Grilled Shrimp
- Preheat grill or grill pan to medium-high heat.
- Mix shrimp, olive oil, garlic powder, salt, and pepper in a large bowl.
- Place shrimp directly onto the grill and cook for 1-2 minutes on each side, or until opaque
and cooked through.
For the Snap Pea Salad
- Toss together the sugar snap peas, apple, English cucumber, red onion, and radishes in a
large serving bowl. Add grilled shrimp. - Whisk together lemon juice, garlic, mint, parsley, salt, and pepper. Drizzle in olive oil while
whisking. Pour the dressing over the salad and toss to combine.
