Dutch Oven Mac-and-Cheese

Nothing says “cozy night in” like a pot of gooey mac-and-cheese. To really wow the family, try making it from scratch! This recipe packs in so much decadent flavor, with three types of cheese thickened into a glorious sauce with a homemade roux, and additions, like cream cheese and Worcestershire, that layer in even more savory goodness. The dish is finished off with crushed crackers, and baked until it’s beautifully bubbling and burnished. It’s the kind of comforting, nourishing meal that the family will ask for over and over again.

Ingredients:
● 1 (16-ounce) package Food Club Large Elbow Macaroni Pasta
● 1 cup Cheddar Cheese Block, shredded, plus more for topping 
● 1 cup Cheddar Jack Block, shredded
● 1 cup Swiss Cheese Block, shredded
● 1 cup Food Club Low-Moisture Part Skim Mozzarella Cheese, shredded, plus more for topping
● 4 tablespoons Food Club Butter
● 4 tablespoons Food Club All-Purpose Flour
● 1 1/2 cups Food Club Half & Half
● 2 cups Fresh Harvest Whole Milk
● 4 ounces of Food Club Cream Cheese, softened
● 1 tablespoon Food Club Worcestershire Sauce
● 1 teaspoon Food Club Salt
● 1/2 teaspoon Food Club Ground Black Pepper
● 1 cup crushed Crav'n Original Snack Crackers


Method:
1. Preheat oven to 350°F. Bring salted water to a boil in Dutch oven. Cook pasta according
to package instructions, about 9-10 minutes. Drain and set aside.
2. Shred blocks of cheddar, cheddar Jack, Swiss and mozzarella cheese using a grater, and
set aside.
3. Melt butter in Dutch oven over medium heat. Whisk in flour, and cook until golden-brown,
about 1-2 minutes. Drizzle in milk and half & half while whisking vigorously until mixture
thickens, about 5 minutes.
4. Add cheddar, cheddar Jack, Swiss, mozzarella, cream cheese, Worcestershire sauce, salt
and pepper, and stir until cheese is completely melted and sauce is smooth.
5. Return pasta to pot and toss well to coat. Sprinkle with additional sharp cheddar and
mozzarella cheese. Cover and bake 20-25 minutes, or until cheese is bubbling. 6. Sprinkle
evenly with crushed snack crackers. Bake uncovered for an additional 5 minutes, or until
topping is golden-brown and crispy. Serve and enjoy
