Crispy Ranch Chicken Strips

Ingredients

  • 1/3 cup Food Club All-Purpose Flour
  • Food Club Salt and Black Pepper, to taste
  • 2 large Fresh Harvest Eggs
  • 5 cups Crav’n Flavor Ranch Tortilla Chips, crushed
  • 2 pounds boneless skinless chicken breasts, cut into strips
  • 1/4 cup Food Club Honey
  • 1/4 cup Food Club Dijon Mustard
  • 3 tablespoons Food Club Mayonnaise
  • 2 teaspoons Food Club White Vinegar
  • 1/4 teaspoon Food Club Paprika

Directions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Put flour into a shallow bowl, season with salt and pepper, and whisk together. In a second shallow bowl, whisk together the eggs. In a shallow dish add the crushed tortilla chips.
  3. Dip chicken into the flour to coat and shake off excess. Transfer to the egg to coat and allow excess to drip.
  4. Coat the chicken in the crushed tortilla chips, gently pressing to adhere. Place the chicken onto the baking sheet. Repeat until all the chicken is coated.
  5. Bake for 8 to 10 minutes on each side, or until the chicken reaches an internal temperature of 165°F.
  6. While the chicken is baking, whisk together the honey, Dijon mustard, mayonnaise, vinegar and paprika. Serve the honey mustard with the baked chicken.
