Chicken Chili

Serves: 6-8
Ingredients
- 1 tablespoon Food Club Olive Oil
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 2 cups Food Club Chicken Broth
- 2 (15-ounce) cans Food Club Chili Starter Seasoned Crushed & Diced Tomatoes
- 1 (15-ounce) can Food Club Black Beans, drained
- 1 (15-ounce) can Food Club Pinto Beans, drained
- 3 cups shredded Brookshire Brothers Rotisserie Chicken
- Food Club Salt and Ground Black Pepper, to taste
- Food Club Shredded Cheddar Cheese, for serving
- Food Club Sour Cream, for serving
- Handful chopped scallions, for serving
- Crav'n Tortilla Chips, for serving
Directions
- In a large pot, heat oil over medium-high heat. Add onion and cook, stirring occasionally, for 5 minutes or until soft. Add garlic and cook for another 2 minutes.
- Add chicken broth, Food Club Chili Starter Seasoned Crushed & Diced Tomatoes, black beans and pinto beans and bring to a simmer. Reduce heat to medium-low and simmer
for 10 minutes, or until thickened. - Stir in shredded chicken until just heated through, 2-3 minutes. Season with salt and pepper, to taste.
- Top with shredded cheddar cheese, sour cream and chopped scallions, and serve with tortilla chips.
