Ingredients
- 5 slices Food Club® Hickory Smoked Sliced Bacon, chopped
- 4 (8-inch) flour tortillas
- 1 1/2 tablespoons Food Club® Olive Oil
- 1/2 cup roasted red pepper hummus
- 1 cup shredded Cheddar cheese
- 4 large Fresh Harvest™ Grade A Large Eggs
- 1 avocado, peeled, pitted and chopped
- 1/4 cup Food Club® Mild Chunky Salsa
- 2 tablespoons chopped fresh cilantro
Directions
- Adjust oven racks to top and bottom positions; preheat oven to 400°. In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; transfer to paper towel-lined plate.
- Place tortillas on 2 rimmed baking pans; brush both sides with oil. Spread tortillas with hummus; sprinkle with cheese. Crack 1 egg in center of each pizza; bake 10 minutes or until egg whites are cooked through and yolks are slightly soft or to desired doneness, carefully rotating pans between upper and lower racks halfway through baking.
- Serve pizzas topped with avocado, salsa, cilantro and bacon.
