Blackberry Lemonade Bars

Ingredients
- Food Club Non-Stick Cooking Spray
- 2 cups Food Club Granulated Sugar
- 3/4 cup Food Club Sweet Cream Unsalted Butter (1 1/2 sticks), softened
- 1 3/4 cups Food Club All-Purpose Flour
- 1 cup blackberries
- 1 cup Food Club 100% Lemon Juice From Concentrate
- 1 teaspoon lemon zest
- 4 Fresh Harvest Eggs
- 1/2 teaspoon Food Club Baking Powder
- 1/4 teaspoon kosher salt
- 1/4 cup Food Club Confectioners Sugar
- Optional: Fresh blackberries for garnish
Directions
- Preheat oven to 350°. Line 13 x 9-inch baking dish with aluminum foil so that foil extends about 2 inches over sides of dish; spray with cooking spray.
- In large bowl, with mixer on medium-high speed, beat 1/2 cup granulated sugar and butter 2 minutes or until light and fluffy, scraping down bowl occasionally. Reduce speed to low; gradually add 1 1/2 cups flour and beat 30 seconds or until just incorporated. Press dough into bottom of prepared dish; bake 15 minutes or until lightly browned. Cool completely.
- In blender, purée blackberries, lemon juice, lemon zest and remaining 1 1/2 cups granulated sugar on high until smooth. Add eggs; blend on high until smooth. Add baking powder, salt and remaining 1/4 cup flour; blend on high until smooth. Pour blackberry mixture over crust; bake 30 minutes or until set. Cool completely.
- Using overhanging sides of foil, transfer bar to cutting board; remove foil and cut into 24 (2 1/4-inch) squares. Just before serving, dust tops of bars with powdered sugar; garnish with blackberries, if desired. Makes 24 bars.
