Baked Zucchini With Goat Cheese

Ingredients:
- 2 Large Zucchini, halved lengthwise
- 1 tbsp Food Club Olive Oil
- 4oz Culinary Tours Goat Cheese
- Food Club Salt
- Food Club Pepper
Method:
- Preheat oven to 400 degrees. With the tip of a knife, score zucchini halves in a cross-hatch pattern sprinkle with salt, and wait at least 5 minutes before cooking.
- Over medium heat, add oil to a large oven-proof pan. Pat zucchini dry and place them cut-side down in the pan. Cook for about 2-3 minutes per side until browned and beginning to soften.
- Transfer pan to preheated oven and bake another 5-10 minutes until desired.
- Remove from oven, season with salt and pepper, and sprinkle with goat cheese. Serve as a side dish or appetizer.
