Baked Zucchini With Goat Cheese

Ingredients:

  • 2 Large Zucchini, halved lengthwise
  • 1 tbsp Food Club Olive Oil
  • 4oz Culinary Tours Goat Cheese
  • Food Club Salt
  • Food Club Pepper

Method:

  1. Preheat oven to 400 degrees. With the tip of a knife, score zucchini halves in a cross-hatch pattern sprinkle with salt, and wait at least 5 minutes before cooking.
  2. Over medium heat, add oil to a large oven-proof pan. Pat zucchini dry and place them cut-side down in the pan. Cook for about 2-3 minutes per side until browned and beginning to soften.
  3. Transfer pan to preheated oven and bake another 5-10 minutes until desired.
  4. Remove from oven, season with salt and pepper, and sprinkle with goat cheese. Serve as a side dish or appetizer.
