Avocado-Lime Dressing
Ingredients
- 1 large ripe avocado, peeled, seed removed
- 1/4 cup water (plus more as needed)
- 1/4 cup Food Club Extra Virgin Olive Oil
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh lime juice
- 1 clove garlic, peeled
- 1/4 tsp. Food Club Paprika
- Food Club Salt and Black Pepper to taste
Method
- Add avocado, water, olive oil, cilantro, lime juice, garlic, and paprika to a food processor fitted with a blade. Blend until creamy. Add additional water for desired thickness.
- Taste and season with salt and pepper. Store in refrigerator and use within 2 days as oxidation (darkening) will occur.
Optional:
- Add 1/2 jalapeno, seeded and diced, when processing for additional flavor and heat.
- Add less water for use on seafood, tacos, or flank steak.
