Applesauce Spice Cake

INGREDIENTS: 


For applesauce spice cake:

  • 1 (16.5-ounce) box Food Club Spice Deluxe Cake Mix
  • 3 Fresh Harvest Eggs
  • 1/3 cup Food club Vegetable Oil
  • 1 cup Food Club Unsweetened Applesauce
  • 1 teaspoon Food Club Vanilla Extract
  • 1 cup chopped pecans

For cream cheese frosting:

  • 2 (8-ounce) blocks Food Club Original Cream Cheese, at room temperature
  • 1/2 cup Food Club Unsalted Butter, at room temperature
  • 4 1/2 cups Food Club Powdered Sugar
  • 2 teaspoons Food Club Vanilla Extract
  • 1/2 teaspoon Food Club Cinnamon


INSTRUCTIONS:


For applesauce spice cake:

  1. Preheat oven to 350°F. Grease and flour two 8-inch round cake pans.
  2. In a large mixing bowl, beat the cake mix, eggs, vegetable oil, applesauce and vanilla extract on medium speed for 2 minutes, until completely combined. Gently stir in the chopped pecans.
  3. Divide the batter evenly between the cake pans and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Set the pans on a wire cooling rack and allow the cakes to cool completely.


For cream cheese frosting:

  1. Using a mixer, beat the cream cheese and butter for 2 minutes, until smooth and creamy.
  2. Add the powdered sugar, vanilla and cinnamon and beat until combined.
  3. Place a layer of cake on a serving plate and spread the frosting evenly over the top. Add the second layer of cake, and spread the frosting over the top and sides of the cake.
