Apricot-Mustard & Herbed Panko Ham

Ingredients
- 1 spiral sliced ham (7-8 pounds)
- 1½ cups Food Club Apricot Preserves
- 1 cup Food Club Brown Sugar
- ¼ cup Asian-style hot mustard
- 1 tablespoon Food Club Worcestershire Sauce
- ¾ cup Food Club Panko Bread Crumbs
- 2 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh Italian parsley
- 2 tablespoons Food Club Unsalted Butter, melted
- 2 teaspoons grated lemon zest
- ½ cup hot water
Directions
- Place roasting rack in large roasting pan. Place ham, cut side down, on rack in pan; add ½-inch water to pan. Cover ham loosely with aluminum foil; let stand 30 minutes. Preheat oven to 325°. Bake ham 1 hour.
- In small saucepan, heat preserves, brown sugar, mustard and Worcestershire to a simmer over medium heat; simmer 2 minutes. In small bowl, stir breadcrumbs, chives, parsley, butter and zest.
- Brush ham with some glaze; bake, uncovered, 20 minutes, brushing with glaze after 10 minutes. Remove ham from oven; increase temperature to 400°. Brush ham with glaze; sprinkle with breadcrumb mixture. Bake 10 minutes longer or until internal temperature reaches 135° and breadcrumbs are browned.
- Transfer ham to serving platter; cover loosely with aluminum foil. Let stand 15 minutes before serving (internal temperature will rise to 140° upon standing). Stir water into remaining glaze; serve with ham.
Sweet Bourbon Ham Glaze

Ingredients
- 1 1/4 cups Food Club 100% Unsweetened Apple Juice from Concentrate
- 2/3 cup packed Food Club Light Brown Sugar
- 1/2 cup Food Club Dijon Mustard
- 1/4 cup bourbon whiskey
- 1/4 cup Food Club 100% Honey
- 3 tablespoons fresh lemon juice
- 1 teaspoon chopped fresh thyme
Directions
- In small saucepot, whisk apple juice, brown sugar, mustard, whiskey, honey, lemon juice, and thyme. Heat to a simmer over medium heat.
- Simmer 5 minutes, whisking occasionally. Makes about 3 cups.
Ham-Stuffed Mushrooms
Ingredients
- 16 large cremini mushrooms
- 1 cup Food Club Panko Bread Crumbs
- 2 tablespoons Food Club Olive Oil, divided
- 1 small yellow onion, minced
- 1 small red bell pepper, chopped
- 1 small green bell pepper, chopped
- 1/2 teaspoon kosher salt
- 1 teaspoon Food Club Italian Seasoning
- 1 cup Food Club Shredded Mozzarella Cheese
- 1 cup cooked ham, chopped
- 1/4 cup chopped parsley, plus more for garnish
Directions
- Preheat oven to 350°F. Remove mushroom stems and use a spoon to scoop out dark mushroom gills, being careful not to break mushroom caps. Place mushrooms cup-side-up on a rimmed baking sheet and set aside
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add bread crumbs and cook, stirring frequently until golden-brown, about 10 minutes. Transfer to a bowl to cool and wipe out skillet. Add remaining olive oil and onion, red pepper, green pepper, salt and Italian seasoning. Cook until vegetables have softened, about 7 minutes. Transfer mixture to a large bowl and let cool 5 minutes. Add mozzarella cheese, ham and parsley. Stir to combine.
- Generously stuff each mushroom with filling mixture. Top with bread crumbs and bake for 25 minutes, or until mushrooms are tender. Garnish with fresh parsley.
Ham and Cheese Sliders
Ingredients
- 12 Brookshire Brothers Fresh Harvest Brown 'n Serve Dinner Rolls
- 12 slices ham
- 8 ounces Food Club Swiss or Cheddar Cheese
- 6 tablespoons Food Club Butter, melted and divided
- 1 ½ teaspoons grainy mustard
- 1 teaspoon Food Club Worcestershire Sauce
- 1 teaspoon poppy seeds
- 1 teaspoon dried minced onion
Directions
- Preheat oven to 350°F.
- In a bowl combine 4 tablespoons butter, mustard, Worcestershire sauce, poppy seeds, and dried onion.
- Cut the rolls in half separating the top and bottom. (If they are attached you don't need to separate each roll). Brush with the inside of the rolls remaining 2 tablespoons butter.
- Place the bottom in a baking pan. Layer about the ham onto and top the cheese.
- Top with the other half of the roll and gently spoon the butter mixture overtop.
- Bake uncovered about 20 minutes or until the cheese has melted and the tops are lightly browned. Serve warm.
Miniature Ham Sandwich Appetizers
Ingredients
- Crav'n Flavor Thin Wheats
- Cheese slices
- Deli ham (or leftovers!)
- Dill pickle slices
Directions
- Slice cheese in crescent or half moon shapes to fit atop the cracker.
- Slice pickles into cracker-sized portions.
- Arrange with cracker first, and top with cheese, then ham, then pickles. Enjoy!
