Smoked Sausage, Black-Eyed Pea, and Cabbage Soup
Ingredients
- 1 Package Eckrich Smoked Sausage, cut into ½-inch slices
- Two handfuls white onion, chopped
- One carrot, chopped
- Handful red pepper, chopped
- Half small green cabbage, chopped
- 1 Clove garlic, chopped
- Parsley, chopped (optional)
- Food Club Olive Oil
- One 16 oz. can Food Club Blackeye Peas, drained and rinsed
- 2 Cups chicken stock
- 1 Tablespoon Food Club Cajun Seasoning
- Food Club Salt and Ground Black Pepper, to taste
Directions
- Heat olive oil in a pan over medium-high heat. Add sausage and cook until lightly browned. Set aside.
- In the same pan, sauté onion, garlic, carrots, and red pepper. Add cabbage and let soften, stirring frequently for 3 minutes.
- Add black-eyed peas, chicken stock, Cajun seasoning, salt, and pepper. Cook for 10 minutes over medium-low heat.
- Add sausage back to the mixture and stir to combine. Enjoy!
