Dutch Red® Potatoes have a red outer skin with yellow flesh, featuring a waxy texture and buttery flavor, similar to the Dutch Yellow® Potato.

Fingerling Potatoes
Potatoes are important staples in many cultures. All potatoes are believed to have originated in South America. Fingerling potatoes are grown for flavor and tenderness, not quantity or size, thus resulting in the best potato available. It’s no wonder they are a world favorite, and they’ll quickly become a favorite at your table, too!
Purple Peruvian, French Fingerling, Ruby Crescent, and Russian Banana are low-starch potatoes, nutritionally rich in vitamin C, fiber and potassium. In addition, potatoes are low in calories. Fingerlings are firm and have smooth skins with similarly colored flesh, approximately 1-3 inches long and 1 inch wide. From appetizers, soups, and stews, to salads and main dishes, you can bake, boil, microwave, steam or roast them..
Prepare as you would any baby or specialty potato. Once washed well, this thin-skinned tuber should be cooked whole and unpeeled. Fingerling Potatoes should be kept at temperatures from 45°F-55°F. When stored in cooler temperatures or refrigerated, the starch content of potatoes has a tendency to change to sugar.

All potatoes are best stored at room temperature between 45°F and 50°F, or in a ventilated cool, dark area. Melissa’s does not recommend refrigerating potatoes as the colder temperature converts the starches to sugar.
Please wash and pat dry potatoes prior to preparation. Because of their naturally thin skin, Melissa’s Red, White & Blue Potato Medley do not require peeling.
